This soup really hit the spot for me!! I have gone back to not eating a great deal of meat, so naturally, I am eating more beans and lentils are a favorite of mine. As you may know, Indian food is a favorite of ours and a good Dhal is perfect on a cold day, especially when you are sick. I changed a normal dhal recipe up a bit and added a few twist and the result was amazing! Spicy, filling and of course, healthy!! Here is my version of a traditional brown lentils with spinach, carrots, zucchini, onion, LOTS of garlic and ginger!! I used a dhal mix of seasoning -- very spicy and sooooo good!!!
